Fresh Mex

As part of my “less cooking, more fresh foods” whirlwind this week, I present to you some deliciously refreshing Mexican lettuce wraps.

Mexican Lettuce Wraps

For the Guacamole:


  • 1 avocado
  • Garlic powder
  • Lemon juice
  • Salt


Mash avocado in a bowl. Add in additional ingredients and mix well.

For the Salsa


  • Red Onion, roughly chopped
  • Tomato, roughly chopped
  • Jalapeno, seeded and roughly chopped
  • Cilantro
  • Lime Juice
  • Salt


Place all ingredients in a food processor and PULSE until well incorporated. If you prefer your salsa to be smooth and well blended, then run the ingredients in the food processor until you reach the desired consistency. I prefer my salsa chunky!

For the Wraps:


  • Romaine lettuce leaves
  • Guacamole
  • Black beans
  • Fresh Salsa


Layer lettuce leaves with guacamole

Top with black beans

Finally, add the fresh salsa
