Hello Fall! Pumpkin Pie Oats

Somebody please take the canned pumpkin away from me. Things are getting serious, I’m on pumpkin overload.

First, I made this Pumpkin Spice Latte. (the Starbuck’s versions aren’t vegan, even if ordered with soymilk!)

Then, I made some pumpkin scones. And now onto the oats. No food is safe.

Bwahahahaha. Need more pumpkin.


Pumpkin Pie Oats


  • 1/2 cup oats
  • 1/2 cup water
  • 1/2 cup milk
  • 1/4 cup pure pumpkin
  • Drop vanilla
  • Good sprinkling of cinnamon
  • Dash nutmeg & ginger
  • Sweetener of choice (I used stevia)
  • Toasted walnuts (toasting not necessary, but definitely worth it)
  • Dried Cranberries
Combine all ingredients but walnuts and cranberries in a pot on stove. Heat over low-medium until mixture becomes thick. Top with walnuts and cranberries and enjoy with a hot cuppa coffee.
Yesterday morning I had so much pumpkin, it was coming out of my pores. But alas, it isn’t even technically fall yet so I’m sure there are plenty more pumpkin recipes to come.
