Two New Oatmeal Recipes

Morning all, it is a fabulous day here!! I feel energized and nourished by my breakfast: a gigantic super smoothie made with strawberries, mango, spinach, goji berries, lucuma, raw protein powder, cacao nibs, and frozen banana. What a treat!! I always feel great when I start the day with a healthy, filling breakfast. A good breakfast can set a healthy tone for your entire day. As I mentioned yesterday, one of my go-to breakfast meals is oats, both cold and hot. Either way, they are a great vehicle for fiber, fats, and protein. Here are two of the oat combos I have been enjoying lately.

Blueberry-Banana-Chia (cooked)

  • 1/2 cup oats
  • 1/2 cup almond milk
  • 1/2 cup water
  • 1-2 tbsp chia seeds
  • Squirt of agave, or sweetener of choice
  • 1/2 cup frozen blueberries
  • 1 banana, sliced
Mix all ingredients except for banana in a pot on the stove. Heat and stir until oats thicken to desired consistency (about 10 minutes). Slice in banana. Top with granola.

Pumpkin Pie Overnight Oats (adapted from my cooked Pumpkin Pie version)

  • 1/2 cup oats
  • 1 cup almond milk
  • 1 tbsp chia seeds
  • 1 scoop vanilla brown rice protein powder
  • 1/2 cup pumpkin puree  (not pumpkin pie mix)
  • Drop Vanilla and dash cinnamon (or pumpkin pie seasonings)
  • Dried cranberries or raisins
  • Sliced banana

Whisk all ingredients together. Cover and let sit in fridge overnight. Enjoy cold!
