Lighten Up & Buckle Down

If you’re like me, you probably indulged a bit over the holiday weekend. All of my foods were vegan and homemade, but just a little heavy. I have tons of leftovers too so I will be eating veggie-loaf and potatoes for the next few days!! However, I am sprinkling in lighter meals here and there to help me not feel so bogged down. Last night I enjoyed a delicious green smoothie for dinner (romaine, spinach, celery, cucumber, and green apple). This salad is another quick and easy idea for a lighter meal.

Grapefruit-Avocado Salad

  • 1 grapefruit, supremed (or peeled and segmented)
  • 1/2 avocado, sliced
  • 1/2 cucumber, sliced (I spiralized mine)
  • Mixed greens


Supreme the grapefruit: I did this by peeling the rind and pith from the grapefruit and then slicing out the segments (check out this how-to video) . Squeeze the rest of the fruit over a bowl to save the juice. Pile the mixed greens on a plate. Place avocado, segmented grapefruit, and cucumber on the plate and drizzle with remaining grapefruit juice. Very light in flavor and feel, but substantial enough to fill you up.

I’m glad I learned how to supreme…I definitely want to start adding in supremed oranges to my Thai Veggie Salads.

Now on to the Buckle Down part! If you have been reading my Wellness Challenge Recaps you will notice I have been rather light on exercise for the past two weeks. And this week has been even worse! I haven’t gotten any legitimate exercise since Saturday morning. I understand that with the holidays things have been crazy busy so I’m not going to “beat myself up” about missing my workouts. But I do recognize that I need to buckle down and get back at it quick before I fall out of the habit. Monday was the laziest day I have had in a while…I didn’t do anything all day and it was glorious! I tried to get up early to workout yesterday and this morning but the long holiday (I had a week off from work) has really messed with my sleeping patterns so I pressed snoozed both mornings.

As soon as I get home from work I’m going to do a pretty good strength session I put together using a new stability disk that I got for Christmas. I will post the workout tomorrow.

Is it just me or is anyone else having to lighten up and buckle down after the holiday madness??
