Strawberry-Ginger Smoothie

I know, I know. You’re sitting there thinking: haven’t I seen this recipe before? Recently? Well, pretty much. This smoothie is actually inspired by the Zesty Blueberry Overnight Oats with Sweet Lemon Cream that I posted on Sunday. It was so good and such a big hit that I was inspired to re-create it in smoothie form, this time using strawberries. The result was an amazing and raw power breakfast that had me zinging with energy!

Ginger not only lends a bright flavor but is also an anti-inflammatory. Research actually shows that its benefits include ovarian and colon cancer prevention, heartburn relief, cold and flu prevention, migraine relief, menstrual cramp relief (!!), and of course it is often used as a remedy for nausea. Add to that the antioxidants and anti-inflammatory benefits of strawberries (plus vitamin C), the potassium and vitamin B6 from banana (also banana helps ensure proper calcium absorption), and of course more Vitamin C as well as liver stimulation from the lemon juice and you have one amazing morning drink! The protein and healthy fats from hempseeds and cashew cream are just icing on the cake smoothie at this point.

I made extra Sweet Lemon Cream on Sunday so this smoothie was a breeze to throw together. I stored the cream in the fridge in an airtight container and it still tastes light and fluffy a few days later – I imagine it could last up to a week (that is, if you can manage not to eat it all first). You could always add in some greens like spinach or chard for an even better nutrient boost but I was in the mood for some color therapy so I left them out.

Strawberry-Ginger Smoothie (makes 1 serving)

Ingredients

  • 1 cup frozen strawberries
  • ¼ tsp. powdered ginger
  • 2 tbsp. hempseeds (optional)
  • Juice of 1 lemon
  • 1.5-ish cups almond milk
  • 1 banana
  • Lemon zest
  • Leftover sweet lemon cream

Directions

  1. Blend together strawberries, ginger, hemp, lemon juice, and almond milk. Throw in banana at the end.
  2. Stir in sweet lemon cream and lemon zest.

I’m sure this would be equally as good made with blueberry but there is something about strawberry and lemon together that I especially love. Give it a try and let me know what you think!
