I’m back with another “not quite a recipe” recipe. Similar to last week’s Vegan Cheezeburger Salad, this is more of an idea than an actual recipe. Regardless, it is delicious!
I am a big fan of oats. I love hot oatmeal (though not as much lately), overnight oats and the recently discovered breakfast cookie dough cereal. I’ve learned lately that I actually prefer my oats to be kind of crunchy, rather than the soft, pillowy oats you get after soaking overnight.
That is why my new breakfast obsession is Vegan Muesli – it’s just oats served up cold with almond milk and your favorite mix-ins. The beauty with muesli is that – just like any other oats – the possibilities are endless. No need to overthink it or make a special grocery trip, just use whatever you have on hand.
Below is my standard muesli mix that pairs quite nicely with a hot cuppa coffee.
Easy Vegan Muesli
- Heaping 1/3 cup oats
- 1 cup almond milk
- 1/2 banana, sliced & sprinkled with cinnamon
- Handful of strawberries, sliced
- Sliced almonds
- Ground flaxseed
- Shredded coconut
Combine in a bowl and enjoy cold.
