My first Daily Eats post of 2013 Vegan MoFo!
If you’re new to the blog, Daily Eats posts are simply a snapshot of a random day’s eats. It’s meant to showcase eating vegan food in a real world setting. Sure there are plenty of blogs with amazing recipe content and photos so beautiful that it’ll make you drool – but the everyday meals are what keep us all alive and nourished!
So alas – this is a snapshot of Sunday’s eats while I completed a work-from-home shift.
AM – first thing I woke up and took Franco on a walk. We go on a mile route in the neighborhood and it helps him get out some of that morning energy!
Breakfast – Blueberry banana oatmeal. Combine 1/2 cup oats, 1/2 diced banana, 1 cup almond milk and a shake of cinnamon together in a sauce pan. Heat until desired consistency (I like my oatmeal slightly liquidy). I topped with a scoop of peanut butter, a handful of blueberries and a shake of buckwheat granola that I made last week.
Lunch – vegan Caesar salad. Plan to post more on this later in the week.
Afternoon snack – Carrot Spice Muffin from Happy Herbivore’s first cookbook.
Dinner – BBQ cannellini beans, steamed broccoli with lemon and a baked sweet potato (If you cook them long enough you don’t need any kind of butter!).
Too bad I didn’t have any dark chocolate, that would have rounded out the day pretty well!
