Easy lunch idea: Mexican Oatmeal

Sunday afternoon I found myself hungry and roaming the kitchen for something good to eat. It was the last day before grocery shopping so pickens were slim. Inspired by Angela at Oh She Glows as well as a lack of food in the house, I found myself making an old favorite that I hadn’t seen in a while: Mexican Oatmeal!

You may think eating oatmeal at any other time than breakfast (and with any other toppings than fruit) is a bit weird, but I promise that not only is it tasty, it’s quick and easy to throw together as well. Not to mention filling!

This type of “recipe” also lends itself well to versatility so the options are endless based on what you have.

Mexican Oatmeal

Inspired by Oh She Glows Cheezy Oats

Base:

  • 1/3 cup oats
  • 2/3 cup water (give or take)
  • 2-4tbsp nutritional yeast, depending on cheeziness preference
  • A few generous shakes of: garlic powder, chili powder, paprika, cumin, salt

Mix together and cook on medium until desired creaminess (adding water if needed to get the oats to cook through fully)

Toppings I used:

  • Cooked, crumbled veggie burger
  • salsa
  • red onion
  • jalapenos
  • shredded romaine

Other toppings I know are delicious:

  • black beans
  • avocado or guacamole
  • corn chips

Of course if you don’t care about it being vegan, you could always use shredded cheddar in place of the nutritional yeast.
